Ultra Scottish old skool cookery dating from 1598!  Cock a Leekie soup, a nice sweet and salty chunky chicken broth great for cold winter days.

Apparantly it’s big in Canada.

What you’ll need-

2 cups pearl barley/ rice

10 Chicken thighs

half cup of chopped dried prunes

One leek, one onion, some garlic

1. Fry onions, brown thighs, cover with water, bring to the boil, simmer for 50 mins.

2. Take out chicken and cool. Add in chopped leek, some chicken stock for an extra flavour kick and pearl barley.

3. Pick meat off thigh bones and add back into the soup with prunes once the pearl barley has cooked and expanded. Season to taste.

Get in!
