Steamed Lemon Sole
I love these wee’ bamboo steamers. Totally underated/ under used in the Western world. Very healthy, easy to use, can stack them as high as you like to mix up flavours, no need to for elaborate ingredients and sauces.
And absolutely no skill required. Bonus.
So line the bottom with parchment, add whatever the hell you want to it, sit atop a small pan of boiling water and put the lid on it.
This is what I put in it:
A fillet of lemon sole, skin off, 6 capers, chopped corriander, small handful of julienne carrots blanched, mangetout, black pepper, pinch of salt and pickled ginger.
Side of soya sauce to dip. Chop sticks are a must 🙂
