This week… Vegan Haggis, Neeps and Tatties with Whisky Sauce and blackened Seeds
Despite some raised eyebrows from nervous Germans about the Haggis, we sold out within two hours.
Ironically, it could be German and has many similarities with typical food here: Stodgy, ‘comfort food’, creamy sauce (they love creaminess), potato mash, simple and satisfying.
Here’s a recipe:
3 cups finely chopped carrots, onions, mushrooms and whatever else you desire! As many colours is recommended as it does end up resembling…
4 cloves garlic
500g red lentils, soaked
500g red kidney beans soaked mashed
1L veg broth
1. Hot oil in a pan, chuck in veggies and fry. Add garlic and lentils and stir for a couple of minute.
2. Add broth and kidney beans and simmer for about 20 mins until lentils are cooked. Then add in oats and continue to simmer until most juices have evaporated.
3. Stick it in the over at 180C and bake for about 45. You want it to be crusty on top, and dry enough to be able to stand up but wet enough to feel like mince. If ya know what I mean!
